I watched a food lecture from Harvard recently, and they were actually introducing meat glue as the ‘next best thing’ and even attributed it to help keeping restaurants open because it gives chefs the ability to develop innovative dishes. So, it’s not really a secret. However, as a meat-eater who does not eat pork, I find it disturbing that I can be eating a pork derivative and not even know it. Makes me consider being a vegetarian.
